At a time when IPAs continue to dominate shelf space and craft lagers are enjoying a major resurgence, it’s worth remembering that other beer styles still have stories to tell. With Entre-deux saisons, Unibroue shines a spotlight on the classic Belgian saison while giving it a distinctly contemporary Québec perspective.
This 7% ABV saison-style ale is brewed with a blend of five grains—barley, wheat, rye, oats, and spelt. Refermented in the can using the techniques that helped build Unibroue’s reputation, it delivers a layered texture that balances rustic character with modern refinement.
The aroma opens with herbal, grain-forward and lightly woody notes, accompanied by floral and spicy undertones. On the palate, the beer remains dry and velvety, finishing crisp and lively—an excellent reminder of why saisons remain among the most versatile styles in brewing.
What makes Entre-deux saisons particularly interesting, however, is its narrative. According to Unibroue, the beer reflects the growing imbalance of seasonal cycles and the environmental changes affecting our relationship with the land. It’s a theme rarely explored in mainstream brewing and one that adds a meaningful layer to the drinking experience.
The release also reflects Unibroue’s broader evolution. In recent years, the brewery has explored products aimed at attracting a new generation of drinkers while remaining grounded in the brewing principles that made the brand famous: Belgian-inspired fermentation, complex flavour profiles, and a strong Québec identity.
Paired with a woodland mushroom risotto, a garden vegetable tart, or even baked pear, Entre-deux saisons proves that while the seasons may be changing, great saison beer remains timeless.
