SafBrew™ LA-02 x Fermentis | The ideal POF negative yeast for delicate low & no-alcohol beers

SafBrew™ LA-02 x Fermentis | The ideal POF negative yeast for delicate low & no-alcohol beers

SafBrew™ LA-02 Masterclass
Inside SafBrew™ LA-02: Development and Brewing Applications
In this masterclass, our friends from Fermentis cover how Torulaspora delbrueckii behaves in wort, what it means for fermentation kinetics and sensory outcomes, and how SafBrew™ LA-02 compares to SafBrew™ LA-01 so you can make the right call for your NOLO project.

What happens when you brew a NOLO beer with Torulaspora delbrueckii instead of Saccharomyces cerevisiae?

To find out, our Global R&D Manager, Gabriela Montandon, and Technical Manager Brewer, Philippe Janssens, joined forces to record a masterclass that brings together scientific expertise and hands-on experience from both the lab and the brewhouse.

SafBrew™ LA-02 is our newest active dry yeast, selected specifically for no and low alcohol beer production. As our first Torulaspora delbrueckii strain for beer, it takes a fundamentally different approach to NOLO brewing. In this masterclass, we cover how T. delbrueckii behaves in wort, what it means for fermentation kinetics and sensory outcomes, and how SafBrew™ LA-02 compares to SafBrew™

LA-01 so you can make the right call for your NOLO project.

WHO IS THIS FOR?

This masterclass is for craft brewers, production brewers, and R&D teams looking to produce no alcohol beer (below 0.5% ABV) or low alcohol beer (below 1.2% ABV) with real sensory quality. If you want to understand the science behind T. delbrueckii fermentation, improve flavor and mouthfeel in your NOLO beers, or decide between SafBrew™ LA-01 and SafBrew™ LA-02 for your next project, this is for you.

Key technical specs:

Apparent degree of fermentation (ADF): ~10%
Target ABV: around 0.2% at 8°P
Fermentation kinetics limit reached after approximately 4 days
Recommended pitching rate: 50-80 g/hL
Recommended fermentation temperature: 20-25°C (68-77°F)
Sensory profile: neutral aroma, no phenols
